How to make a simple pasta dish you can eat everyday

Are you a devoted pasta eater but worry about the “healthy” side of eating it too often? Leave it to us health nuts to find something so tasty but using a vegetable. How can this be?! Pasta from a vegetable?
Using a spiralizer tool, you can now make just about anything into pasta. Carrots, sweet potatoes, zucchini, cucumber, etc. Genius. The tool I use was under $15.00 and is so easy to use. Here’s the one I purchased off of Amazon.
So, you’re telling me I will eat pasta yet it’s from zucchini? The answer is OH YEAH!…. and you won’t even notice. I mean, the texture won’t be the fluffy and full taste you are used to, but you can boil the zucchini which can soften the texture.
For this recipe, all you need are a few things. Oh, and only 20 minutes, max.
Ready?
Noodles: 1 zucchini (chop off the ends)
Pesto: 1 avocado (mashed)
1-2 tbsp. olive oil (start small then add in more)
1 tsp. basil (chopped)
1 tbsp. finely chopped garlic or onion (optional)
salt and pepper to taste
Two Bowls (one for noodles and other for pesto)
Spiralizer tool
Large Spoon
and….patience. Once you start smelling the pesto, you will want to dive right in 🙂
1. Spiralize the noodles into your large bowl
2. Start to mash your avocado
3. Mix all of the Pesto ingredients together
4. Toss together with your noodles- Time to EAT!
You can eat this a la carte or have this as a side with a health protein. My friend recently made it with chopped tomatoes which was also delicious and gave it another yummy flavor.
The fantastic part about this pasta is you can eat it throughout the year. I tend to make it a lot during the summer months as it’s really light, tasty, and filling.
Using zucchini or vegetable as a base is one of the best ways to incorporate getting more greens into your diet. You can get creative by using spaghetti sauce, marinara sauce, or even a healthy version of alfredo sauce (recipe coming soon!).
