Quinoa Dish + 4 ingredients

How delicious does this bowl of goodness look?

This is one of my favorite dishes to make (now I am sharing with you!) as it’s full of nutrients that will keep you satisfied.

Many of you have heard of Quinoa (keen-wah), but what really is it?  Quinoa is an amazing “seed but not grain” that is similar to the consistency of rice, except it is full of protein.  Quinoa can replace oatmeal for breakfast, cake for desserts, and rice or pasta for lunch and dinner dishes.  I like to make a big pan of it on Sunday’s that I will use in several meals throughout the week.  You can even boil it in coconut water or with herbs and spices that will actually flavor the quinoa.

Quinoa is packed full of fiber, magnesium, and iron.  You can’t go wrong.  There are several ways you can cook it, whether you decide stovetop, rice cooker, or even in the crock pot.  For this recipe, I simply boiled 2 cups of water to 1 cup quinoa.  Keep in mind the quinoa will expand, typically
1 cup quinoa equals 3 cups cooked.

Once you have the quinoa cooking, it’s time to start chopping away.

Here are the simple ingredients you will need.

1 Cup Spinach
3-4 Basil Leaves
2 Avocado
2 Tomatoes (medium)

Simply chop each of the ingredients ( I chopped the spinach and basil together so they marry), then add everything together in one bowl.  Once everything is mixed together, the avocado adds enough texture you don’t even need a dressing.

Now, pictured below are a few other ingredients you can add that will give it extra flavor. If you don’t have fresh basil leaves, you can certainly use dry.  My favorite is from Trader Joes.  I like to sprinkle garlic powder on the tomatoes after I have them chopped and it instantly soaks up the flavor.  If you like to use Olive Oil and miso, they are great additions where you only need 1 teaspoon or so.
