A little of “this”, A little of “that”….and I came up with “these” …….
Pumpkin Fiber Muffies
It’s not full holiday cheer until you eat, drink, or bake with pumpkin! Are you as excited as I am with it being the holiday season?!
There are so many dishes and desserts you can put together using pumpkin. Not to mention why, as there are so many benefits pumpkin contain like:
- Rich in anti-oxidants and beta-carotene
- Good for your heart
- Full of potassium
- Lower your blood pressure
- Promote weight loss
The other night I was at the market and decided that I wanted to make something with pumpkin. I picked up pumpkin puree (100% pure, not pumpkin pie filling), and decided to make some sort of a-fiber-protein packed breakfast type “muffie.” I put a “little of this” and a “little of that” together and boy, did it turn out delicious! The best part is that it took less than 20 minutes to put it all together and 20 minutes to bake. You don’t have to feel guilty with this dish because everything is on the “good for you” , natural list!
Ta da! Here’s the final product:
Grab a note pad and jot down these ingredients then head to the store!
Dry ingredients:
1/2 tsp pumpkin spice
1/2 tsp cardamom
1/2 tsp baking powder
pinch of salt (pink himalayan, sea salt…your choice)
3 cups oats
2 scoops (2 tbsp) protein powder (Tera’s Whey is one of my fav’s)
1/2 cup coconut flour
2 tbsp fiber (USANA is my preferred brand, there’s no flavor so it’s perfect in dishes)
Mix ingredients below together, then combine with the dry ingredients above:
3 bananas (mashed)
1 can pumpkin (organic)
1 tsp vanilla
1/2 tsp maple syrup (adds a stronger flavor)
1 cup milk (flax, almond, coconut… your choice)
I decided to bake in one larger dish and then also make into cupcake size (bite size!). I used coconut spray to coat the pan before baking which adds a little sweetness to it. Bake at 350* for 20-25 minutes.
After it came out of the oven, I experimented and added a little “frosting” that consisted of coconut cream and one scoop of the Tera’s Whey Protein Powder. I drizzled over the top and it instantly glazed over. Feel free to add this as well, but its tasty enough even without it.
